As far as scents go and my personal use of them... I have never used scents to try and cover another scent up. I, like Byron, think the dogs nose works to well when it comes to this stuff... A drug dog can pick up drug residue on a $20 bill even after it's been handed around and switched wallets a number of times. Or smell them through Gasoline, as some smugglers have tried to hide them in gas tanks. Or I think even more impressive is the cadaver dogs that can smell a body under water.
Now, I have used scents as attractants. One time in particular, I was asked to kill some coyotes on a cattle ranch. I went and called, but could never get one of the coyotes into shooting range. I had shot two others from the property, but couldn't get this one to come in. Just for the heck of it, I got some Coyote in heat scent from a friend who deals in scents, and tried it as a last resort. I used a dripper to dispense the foul concoction. I hung it from a tree branch that came out further than the other branches and was low enough for the cows to use for a rub.
I went back the next week to check the dripper and refill it. When I got to it, the ground under it was dug a little. Looked almost like a deer scrape, except much smaller. Not 10 feet from the dripper was a what looked like a bedding area. I figured it was a male tending his "female". It was another 2 weeks of watching the area before I was able to spot a coyote from there. I set up about 75 yards downwind from where the dripper was hanging and was in some thick brambles and vines that had grown on a fence line. I got in before sunrise and waited. I wasn't there for more than 30 minutes or so and the coyote had already come to the dripper.
I watched him fool around for a few minutes through the scope and he came in, looked around sniffed the air and then the ground where the dripper was hitting. He scratched the top of the dirt and sniffed a couple of times and then went and laid down. Right where the bedding spot was. As soon as he laid down he took a .222 sleeping pill and woke up dead. This was one of my favorite hunts cause it was a new method for me. Watching the coyotes behavior was priceless. I had never seen one doing much of anything but looking for prey screams coming from a caller and it was quite different. I almost felt bad for shooting him... I said almost...
